The grapes are collected manually in boxes of 10/15 kg of vineyards of the property located at 650 meters of altitude. Conveyed to the winery with great care, it is selected on the table choosing the best grapes prior to wine-making and vinification.
The fermentation and subsequent maceration, according to the variety, in contact with the skins is carried out for a period of 15/20 days and temperature control not exceeding 28ºC
