The refreshing and aromatic ‘Sauvignon blanc’

It is perhaps one of the great unknown varieties of white grape for the general Spanish public, but its characteristic herbaceous aromas and its refreshing high acidity are gradually opening the doors of the market, especially in these hot days when cooler wines are desired.

This greenish-skinned white variety, from the Bordeaux region of France, is noted for its preference for cool, temperate climates.

Currently, it can be found in places as far away as California, South Africa, Australia, Spain and Chile.

The bunches of this grape are characterized by being small, uniform and very compact so that the berries tend to deform by pressure between them. These berries also have a fairly thick skin and their pulp, without color, is juicy, compact and fruity.

Wines made from Sauvignon blanc

Usually the wines that we are going to find made with Sauvignon blanc are young, dry wines with medium body and high acidity, tremendously aromatic.

 The standard wine of this variety will present accentuated herbaceous aromas, such as grass, green bell pepper and asparagus, as well as floral aromas, such as tree blossom. Other primary aromas that can be found will vary according to the degree of ripeness of the grape and can range from green fruit notes, such as apple or gooseberry, to aromas of riper tropical fruit, such as passion fruit or passion fruit.

Due to their characteristic pronounced aromas, they are wines that are usually drunk young, since after the second year after their production, it is easy for them to begin to fade and become aromatically flat. This does not mean that we cannot find in the market some options of Sauvignon blanc aged in oak barrels, being more complex wines, with chalky, stony and even smoky aromas. 


The Sauvignon blanc OF Bodegas Luzón

At Bodegas Luzón we blend this variety in one of our freshest and youngest wines: Luzón Colección Blanco.

As we said, this wine is made from a coupage of Sauvignon blanc with Macabeo, varieties from trellised vineyards on limestone soils, with an average age of 20 years and located at an altitude of over 800 meters above sea level.

To maintain all the freshness of the clusters and the fullness of the fruit, mechanical harvesting is done at dawn, separating the grapes from the stems immediately and after a light pressing, the must is racked and clarified to ferment for 15 to 20 days at a controlled temperature of between 10 and 16ºC.

The result is a very clean wine, yellow with greenish reflections and very bright, which highlights its aroma presenting a fresh nose, in which green apple predominates at first, to give way to citrus and tropical fruits. On the palate, the entry is unctuous, with balanced acidity and a persistent finish.

Luzón Colección Blanco, being a young and fresh wine, pairs perfectly with cheeses and crustacean seafood seasoned with garlic and parsley, as well as grilled oily fish or with mild sauces. Meats also pair perfectly, especially fatty white poultry (such as duck or goose).
